Homemade Tomato And Basil Recipe

The way to prepare the best Tomato and Basil Sauce? It's Italian Dining 101 and one cannot prepare Spaghetti Bolognese, Pizza, Lasagne… without it.



The following recipe should interest everyone. From dads and moms who need to prepare dinner in a hurry, to foodies with a regard for fresh and nutritious ingredients, to students who have no money and no time!!

Preperation Time: 10 mins
Cooking Time: 25 mins
Ingredients:
15 Medium Sized Tomatoes
Fresh Basil
1 Large White Onion
1 Medium Red Onion
2 Cloves of Garlic (halved)
Extra Virgin Olive Oil
Salt & Pepper
Method:
Preparing and Taking off the Skin from the Tomatoes
Cut a cross on the bottom of the tomatoes using a knife. When you have done this for all the tomatoes, lower them into a pot of boiling hot water for approximately 20 seconds. Hint: Don't put all of the tomatoes into the boiling water at the same time because we don't want the temperature of the water to lower. It's better to do this in stages. After the tomatoes have been boiling for the required time, remove and place in very cold water. The skin can then be very easily peeled from the tomatoes.
After the skin has been removed, cut the tomatoes in half and remove the core of the tomato. Then chop them into quarters.
Cooking the Sauce
Slice the onions very small. Tip: The smaller food is after prep, the less time it needs to cook and so, the flavour and vitamins and minerals are better preserved.
Place a pot on high gas and add half a glass of olive oil, add the onions and garlic and fry off for approximately Two minutes or until soft. Add the tomatoes and cook for roughly 15 minutes on a medium heat. Cover the pot.
After 15 minutes of cooking the tomatoes, add the basil and mix. Cook for another 5 minutes.
Add salt and pepper to season and then mash the mix. Preferably, you will want a wide-pronged potato masher for this but really, any mashing tool will do.
Your sauce is ready! If you wish to make an extra large portion, this sauce may be poured into sealable containers, boiled once more in the jar for approximately 4 hours then placed in the fridge freezer for up to 2 years!!
